Ingredients

Dough:

  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tsp sugar
  • ½ tsp salt
  • 3 tbsp ghee, clarified butter
  • ¼ cup yogurt
  • ½ cup water

Stuffing:

  • 2 potatoes boiled and mashed
  • 1 cup grated paneer, Indian cottage cheese
  • 1 tsp ginger paste
  • 1 small onion, finely chopped
  • 2 green chilies, finely chopped
  • 1 tsp crushed coriander seeds
  • ½ tsp red chili powder
  • ½ tsp garam masala
  • ½ tsp cumin powder
  • 1 tsp aamchur dry mango powder
  • ¼ tsp black pepper
  • 2 tbsp chopped fresh coriander, cilantro
  • ½ tsp salt, adjust to taste

Instruction

  1. In a large mixing bowl, combine the flour, baking powder, baking soda, sugar, and salt for the dough. Crumble in the ghee and mix well. Then add yogurt and water gradually to form a smooth dough. Knead the dough for about 5 minutes until it’s soft and pliable. Cover the dough and let it rest for 2 hours.
  2. For the stuffing, in another bowl, mix together mashed potatoes, grated paneer, ginger paste, chopped onion, green chilies, crushed coriander seeds, red chili powder, garam masala, cumin powder, aamchur, black pepper, chopped coriander, and salt until well combined. Set aside.
  3. After the dough has rested, divide it into 4 equal portions. Take one portion and roll it out into a thin circle on a floured surface. Spread some ghee and flour mixture evenly over the rolled-out dough. Roll it into a spiral and then flatten it gently.
  4. Place a portion of the stuffing mixture in the center of the rolled dough circle. Seal the edges carefully, ensuring the stuffing is enclosed completely. Sprinkle some chopped coriander over the stuffed naan.
  5. Heat a tawa (griddle) over medium-high heat. Place the stuffed naan on the hot tawa, brushed side down. Cook for about 2 minutes until bubbles start to appear on the surface. Then flip it over and cook the other side until golden brown spots appear.
  6. Once cooked, remove the naan from the tawa and brush it with some ghee. Crush the naan gently with your hands to create a crispy texture. Garnish with some grated paneer and fresh coriander leaves.
