Ingredients
- 1 cup whole wheat flour
- ¼ teaspoon salt
- 1 teaspoon oil or ghee
- ½ cup tightly packed grated cheese
- ¼ cup finely chopped onions
- ¼ to ½ teaspoon pizza seasoning, oregano, and chili flakes
- Fresh coriander
Instructions
- In a large mixing bowl or plate/tray, combine 1 cup of whole wheat flour, ¼ teaspoon salt, and 1 teaspoon oil or ghee. Gradually add water and knead into a smooth and soft dough. Adjust the water quantity as needed based on the quality of the flour. Cover the dough with a lid or cloth and let it rest for 20 to 30 minutes.
- While the dough is resting, prepare the cheese stuffing. In a bowl or plate, mix ½ cup of tightly packed grated cheese, ¼ cup finely chopped onions, ¼ to ½ teaspoon pizza seasoning, oregano, chili flakes, and fresh coriander. You can use regular plain cheese or cheddar cheese.
- Mix the stuffing ingredients thoroughly.
- Pinch two small balls from the dough and roll them between your palms. Flatten them and dust with whole wheat flour.
- Using a rolling pin, roll them into rounds about 4 to 5 inches in diameter. Aim for both rounds to be the same size.
- Place the cheese stuffing in the center of one of the rolled dough circles. Be careful not to overstuff or understuff the filling.
- Roll the dough and place the stuffed paratha on a hot tava (griddle). Cook over medium to medium-high heat until golden brown and crispy.
- Once cooked, you can wrap the paratha in an Ekvee food wrap to keep it fresh and hot for 4-5 hours. The food wrap is greaseproof and will prevent the paratha from becoming soggy.
