Ingredients

For Dough:

  • All-Purpose Flour – 2 cups
  • Ghee – 1/4 cup
  • Salt – 1 pinch
  • Water as required

For Stuffing:

  • Ghee – 1/2 tsp
  • Chopped Almonds – 2 tbsp
  • Chopped Cashewnut – 2 tbsp
  • Chopped Pista – 1 tbsp
  • Desiccated Coconut – 3 tbsp
  • Raisins – 1 tbsp
  • Mawa Khoya – 200 gms
  • Saffron Strands
  • Cardamom Powder – 1/2 tsp
  • Sugar Powder – 4 tbsp

For Chasni Sugar Syrup:

  • Sugar – 300gm
  • Water – 3/4 cup
  • Saffron Strands

Instructions

Step 1: To make the filling, roast semolina (suji) on a low flame till it changes color. Mix in sweetened condensed milk, cardamom powder, raisins, cashew nuts, almonds, and grated coconut. Cook on medium/low flame, stirring occasionally, till the mixture is dry. Divide into 16 portions.

Step 2: To prepare the dough, pour ghee into the flour. Add water and make it into a stiff dough. Knead the dough till pliable. Keep aside covered for 10-15 minutes. Knead the dough once again. Divide into 16 balls.

Step 3: Roll each ball into a flat round. Place one portion of the filling, fold it over, and shape it into a gujiya, sealing the edges with a little water. Deep fry in hot oil till golden brown.

Step 4: To seal, use gujiya moulds or press with the ends of a fork or simply twist with your hand.
