Ingredients

  • 2 cups unsweetened milk powder
  • 1 cup ghee
  • 1½ cups sugar
  • ½ cup water
  • Few strands of saffron
  • 2 tbsp chopped pistachios

Instructions

  • In a bowl, mix 2 cups of milk powder and 1 cup of ghee until the milk powder is moist. Set aside.
  • In a large kadai, dissolve 1½ cups of sugar in ½ cup of water.
  • Boil the sugar mixture on medium flame until it reaches a 1-string sugar syrup consistency.
  • Add the milk powder and ghee mixture to the syrup and mix well.
  • Keep the flame on low and continuously stir until the mixture becomes silky smooth.
  • Add a few strands of saffron for enhanced flavor.
  • Transfer the burfi mixture to a tray lined with baking paper.
  • Top with saffron strands and 2 tablespoons of chopped pistachios, pressing gently.
  • Let the burfi rest for 1 hour to set.
