Ingredients
- 1 pound of small russet potatoes
- 1 tablespoon extra-virgin olive oil
- ΒΌ teaspoon salt
- Desired seasonings (chaat masala, chilli powder, or garlic powder)
Instructions
- Thoroughly scrub and dry the potatoes. Fill two large bowls with cold water. Using a peeler, peel the potatoes in long strips, placing the peels in one bowl of water and the peeled potatoes in the other.
- Drain the peels and pat dry with two kitchen towels.
- Heat olive oil in a frying pan over medium-high heat. Fry the potato peels in batches until lightly golden and crisp, about 2-3 minutes per batch.
- Transfer the fried potato peels to a paper towel-lined plate to drain any excess oil.
- Immediately toss the potato peel chips with salt and any desired seasonings.
- Serve the potato peel chips warm as a delicious snack or appetiser.
