Ingredients

  • 1 pound small russet potatoes
  • 1 tablespoon extra-virgin olive oil
  • ¼ teaspoon salt

Instructions

  1. Thoroughly scrub and dry the potatoes. Fill two large bowls with cold water. Using a peeler, peel the potatoes in long strips, placing the peels in one bowl of water and the peeled potatoes in the other.
  2. Drain the peels and pat dry with two kitchen towels.
  3. Heat olive oil in a frying pan over medium-high heat. Fry the potato peels in batches until lightly golden and crisp, about 2-3 minutes per batch. Be careful not to overcrowd the pan.
  4. Transfer the fried potato peels to a paper towel-lined plate to drain any excess oil.
  5. Immediately toss the potato peel chips with salt and any desired seasonings, such as paprika, garlic powder, or grated Parmesan cheese.
  6. Serve the potato peel chips warm as a delicious snack or appetizer.
