Ingredients
- 1 cup whole wheat flour atta
- ¼ cup semolina sooji
- 1 tablespoon carom seeds ajwain
- 1 tablespoon fennel seeds saunf
- ½ teaspoon cumin seeds jeera
- ½ teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons ghee or oil plus extra for frying
- Water as needed to make dough
Instructions
Prepare the Dough:
- Combine wheat flour, semolina, carom seeds, fennel seeds, cumin seeds, turmeric, chili powder, garam masala, and salt in a large bowl. Mix thoroughly.
- Add ghee (or oil) and rub it into the flour mixture until it resembles breadcrumbs.
- Gradually add water and knead to form a firm dough. Cover and let it rest for 15-20 minutes.
Roll and Shape the Mathris:
- Divide the dough into small balls and roll each into a 3-inch thick disc. Lightly dust with flour to prevent sticking.
- Prick each disc with a fork to prevent puffing during frying.
Fry the Mathris:
- Heat oil in a deep pan over medium heat. Test the oil by dropping a small piece of dough; if it rises, the oil is ready.
- Fry the mathris in batches on medium heat, turning occasionally, until golden brown and crispy.
